Making tahini yourself is a game changer. It's freakishly expensive in the shops, and dirt cheap and easy to do yourself - but you need a strong blender like a nutribullet. You can also make tahini from other high fat seeds such as sunflowers, macadamia etc.

Toast the sesame seeds. You can do this in the microwave, oven or the stovetop.Microwave: put in a ceramic or glass bowl (Not plastic) and microwave for 1 minute, stir, and then put back in for 30 second intervals, stirring after each round in the microwave, until the seeds are golden and smell delicious.Oven: spread the seeds on a baking tray and bake for around 5 minutes, watching carefully, until golden. Remove from the tray otherwise the hot tray will burn the seeds.Stovetop: Place the seeds in a small sauce pan and cook over high heat, moving or stirring constantly until golden and fragrant. Remove from the pot otherwise the hot pot will burn the seeds.
Pour the seeds into the nutribullet with the Milling blade, and pour enough oil in to come up to the same level as the seedsBlend until totally smooth.
